Gustavo Azulay has been in the food business for almost 20 years in Argentina. After being an executive chef at Caterplan, he now owns and manages a restaurant business and catering service. Aside from managing a foodservice internet, www.dechefs.com, Mr. Azulay researches and develops exotic food recipes. He also teaches at a foodservice school where he trains his students in menu management and how to start up a food service business.
Supervising different businesses prompted Mr. Azulay to look for a software product that will help him manage these affairs. He claims, "Before software products, I had a set of lifetime consuming worksheets. It was really time-consuming…more countries that have inflation and prices changes very fast." He said it is important to have a system that would give him "organization, discipline, easy-to-follow instructions, fast communication between workers and little place for guessing."During a Caterplan Chef's Meeting in 1995, Mr. Azulay learned about CALCMENU. Since then, he has been using Enggist & Grandjean Software SA's (EGS SA) products, the company behind CALCMENU. He is now using the EGS CALCMENU 2008 6.0 version, which according to him, is "the most complete and chef-oriented recipe management software." He said EGS products have answered issues and concerns that he faced before. He now has an "easy-to-work system, clean data, and fast answers." Mr. Azulay added that with CALCMENU, "it is easy to gather information about products, yields and measurements. It is also great for multiplying recipes and it also gives nutritional data." He also revealed that he is using CALCMENU as his secret card since it improved his previous kitchen workflow.
